The Cauliflower is a versatile vegetable. It can be made into rice, roasted, eaten raw and even made into a pizza crust. It is full of protein, Vitamin C, Vitamin K, Vitamin B6 and manganese which our bodies need to be healthy.
The downside of cauliflower is that is has a lot of sugars so may not be the best choice of vegetable for the diabetic person. It also is loaded with potassium which is great, however, for people with high potassium levels may not be the vegetable of choice as well.
If you are watching your sugar and potassium levels you may want to limit your intake of cauliflower.
Roasted Cauliflower with Cumin
1 Head of Cauliflower
Extra Virgin Olive Oil
Wash and cut the head of cauliflower into pieces as shown in the photograph. Arrange single layer on a baking sheet and sprinkle lightly with the extra virgin olive oil. Then sprinkle with cumin.
Roast the Cauliflower at 425 degrees for approximately 35 minutes or until browned.
You can also add other spices such as; Thyme, Garlic, Oregano, Salt and Pepper, red pepper or any of your favorite spices.
